Cooking dinner during the week (especially a week during exams) can sometimes get pushed on the back burner. That is why it is nice to have quick, simple, and healthy recipes to make for dinner. One of my go-to’s is a Dairy-Free Avocado Quesadilla complete with salsa and Blue Corn Tortilla Chips.

As a busy engineering student, most times I find it difficult to get out for some “me” time. I am really trying hard this school year at making my health, both physical and mental health, a top priority. Why? healthy and smart
College is back in full swing–meaning, that it is more difficult to keep up my healthy intentions when I have other things like studying, group projects, and club meetings to focus on. I have been ridiculously busy lately as made obvious by my lack of posts… I am thankful that things are winding down so I can get back into my fitness routine (I might have back-tracked a bit…) and focus on my priorities. I am a firm believer that the body can do wonderful things (like running a marathon) if you take care of it. I know I need to train properly and effectively as I cannot help but think of Jessi–I am running the Boulder Half for her, for goodness sake.

I finally tried crossfit… and I really really like it. I have only been to three one-on-one sessions, but so far, I get an amazing workout every time. It definitely is not for the weak minded… I find myself pushing hard and testing my limits of what I can do versus what my mind says I can do. The following are some of my beginning workouts or WoD (workout of the day). Continue reading
