Well, it was great while it lasted–my Thanksgiving break that is. At least I got a full week off at home to relax, enjoy the warm weather, spoil my tummy (maybe a bit too much), and decorate the house for my favorite holiday! ‘Tis the season. My home in Houston just explodes with Christmas spirit and I soak every moment of it in. This is everything holly and jolly that happened in just the two days after Thanksgiving.
As I sit here, I feel my aching stomach contemplating the week of indulgences I have succumbed to. Asking myself, “what happened? Where did my will power go?” I am writing this, not only for myself, but for all of you that are dealing with the all too familiar aftermath of Thanksgiving. Continue reading

What have I been up to? Well, other than the new fresh-faced blog appearance (let me know what you think in the comments), I have been bounding all over the place in my studies, life, and even changes in my environment. I feel like I am already trying to get a fresh start on the New Year fast approaching. For now, I will focus more on getting things caught up before I reveal my New Year’s resolutions in the making, which, should be revealed not a day sooner than New Year’s Day. Instead, here is a refresher of the new things occurring in my life.

It was about my third to fourth time doing crossfit and yesterday a lot of things were introduced to me haha. I absolutely love it though and the feeling of being sore the next day (today). What is more satisfying than a colorful, flavorful, vegan Thai dish? Not much… well desserts, but that is a given. I made this dish several times during my vegan challenge month. I had it for dinner, then stored the left-overs in the fridge to pack for lunches and have for dinner again later on during the week. It is a great dish for meal preparation. Let me just apologize for being a bad blogger lately. My October has been filled with all sorts of (vegan) food, festivities, fall, and lots of studying. I know it is no excuse because blogging does not take that long, especially if I just pop a few recipes online (I have so many to post from Vegan Month). For now, I will do a recap/summary of my October, then I will begin posting recipes again. I wish I had more workouts to post lately, but unfortunately, I have to admit I have fallen behind on my health and fitness since the summer.
