half a year spent blogging

Happy almost New Year!  I cannot believe the year I have had… It has been a crazy adventure to say the least, but one of my favorite and most memorable parts of the year, has been sharing it with you all!  I started this blog this past summer in June after losing my best friend back in May. chocolate pomegranate smoothie

chocolate pomegranate smoothie--Journey for Jessi The weather has been foggy, rainy, dreary and “cold.”  Well, cold for Houston.  This always seems to happen when I come home.  I expect a break from the cold and the snow and want to come to the warm and sun, but here I am… oh well.  I am not letting it ruin my fun!

christmas patience and presents

christmas patience and presents--Journey for JessiChristmas eve and Christmas this year were very different.  I cannot think of a tradition that was followed to a tee this year.  I guess that is what happens when you grow older and you are the youngest in the family.  The Christmas season this year started out with a bang–maybe too much of a bang though, because my spirit slowly faded.  I felt like Cindy Lou Who from the Grinch.  I should have sung “Where are you Christmas” on repeat. eggnog cupcakes

finished productMerry Christmas Eve!  Just to let y’all know, this is my favorite holiday (in front of Easter and my birthday).  The excitement of Christmas approaching, family getting together, and all of the festive parties.  I never like going to a party empty handed, so when I was assigned to bring a dessert, my heart rejoiced!  I immediately thought of my favorite–eggnog. fruit cake swirl cookies

fruit cake swirl cookies--Journey for JessiSay what you must about fruit cake.  To be honest, I have never actually eaten fruit cake, so I cannot be one to judge.  I just know that it has a bad reputation.  That is why when the time came for my nutrition club’s secret santa recipe exchange, I decided to challenge myself and turn the not-so-beloved holiday cake into a “semi-healthy” holiday cookie that could restore the good name of both “fruit” and “cake” around the holidays. home sweet texas

home sweet texas--Journey for JessiI took my last final Friday morning.  After a grueling week of being held up in the library and stressing, it was so nice to finally be finished!  Now all that was left was packing and waking up at 3:30 am Saturday morning to catch my flight.  All that was standing between me and Texas was the dreaded packing… oh, how I despise packing…  Continue reading

eggnog protein shake

eggnog protein shake--Journey for JessiFun fact about me?  I absolutely love the “nog”.  I am all about that creamy, sweet holiday goodness. Just talking about it gives me happy feelings inside.  I know what you might be thinking if you know me, “Emily, what about your nonexistent dairy tolerance?”  It is true, dairy hates my insides–milk, cream, cheese, and the likes.  After the great Sonic debacle of 2014 (not kidding), I swore off all dairy in any amounts.  So where does this leave me in terms of my favorite holiday treat? Continue reading

the jam plan

the jam plan--Journey for JessiThis has been me.  Not kidding.  Just ask my roommates.  When I get stressed or sad or depressed, I bake–I bake a lot.  But with all of that baking comes recipes, and a lot of them.  So this is beneficial for both you and I.  The recipe I am posting here is for Orange Blueberry Oat Muffins–yum right?  You can also substitute cranberries for the blueberries for more of a winter take on this recipe.  That is what I did for my secret santa in Nutrition Club.  I subbed cranberries for blueberries and made the muffins into a loaf.
