I LOVE tea. I have it at least 1-2 times a day. There are so many kinds and amazing flavors to try. When I discovered Buddha Teas, my tea-loving heart rejoiced! Because there are so many types and brands of teas available, I like to make my tea time special. Buddha Tea does just that for me!

sunday relaxation
I cannot tell you how nice of a Sunday I had–okay well maybe I can. It was a beautiful day! Sunny skies, melting snow, warm temperatures…sigh. It is glorious. For breakfast, I had half a grapefruit sprinkled with stevia and cantaloupe with ¼ cup cashews (not pictured). I always pair my fruit with a nut or fat of some sort to prevent drastic blood sugar spikes.

vegan quinoa chili
You have no idea how many times I have begun to post this recipe, but failed miserably. Why? Because it’s that delicious! The first couple of times, I never got the pretty “after” shot you see above. It was just too good looking and calling my name to devour it–so I did. When I finally got a good, presentable picture and begun to write up this blog post, I kept looking through my pictures and sorting the ingredients all out until my stomach literally begun growling… It is really a miracle that this recipe is finally making it to the world, but I knew I had to share it! I am on a mission to spread this scrumptious meal to the world–er, my readers anyway. Here is the infamous, Vegan Quinoa Chili…

spring semester
Classes resumed this week for me! Yay college! I actually am really excited about this semester. What has changed? The more difficult classes? Longer and busier schedule? Nope! My new outlook on life! Remember my New Year’s Resolutions? Yeah, those are still going strong–if not stronger than ever!

sweat and sweet
Yesterday was just one of the many weekend days I spend just hanging out and doing whatever comes to mind. No schedule, no limiting obligations, no commitments… it is so nice to have days and weekends like that. This is my last weekend to have such an agenda–rather lack of agenda since classes resume on Tuesday to kick off the spring semester. As my last free weekend, I decided to do a home workout and make sweet potato chips to enjoy.
texas wheat waffles
Y’all, I could not be happier this morning! Can you just look at these Texas waffles? Pure heaven! I cannot tell you how excited I was that these turned out the way I had hoped! Yayayay! Rejoice with me! You can take the girl out of Texas, but not the Texas out of the girl y’all!

homemade hummus
Who knew how easy hummus was to make? So economical too! If you are a common cook, it is very likely that you have all of the ingredients already stocked in the pantry and fridge, maybe you just have to pick up a can of chickpeas and tahini, but that it! Here is my base hummus recipe, but feel free to add in some avocado or roasted red peppers to create a delish take on your hummus!
cycling and protein
I am back in Colorado and back at the Rec! It takes some getting used to after being at my smaller gym in my hometown. To me, it is more intimidating with all of the students that pretty much live at the gym. I know it is silly, but some of those big guys look like they could crush (and I am probably right…) One of my resolutions though, is to stop being afraid of failure. I often do not try new things for fear of being made fun of and failing, then being made fun of some more. But, I know I have already grown a lot this year and I feel more confident–so who really cares anyway if I look like a fool? It’s my first time and I failure is part of the process of success! the breakfast or brunch burrito
Back in Colorado, but my breakfast (brunch) game is stronger than ever. Maybe it is just because classes haven’t started yet and I am feeling energized and creative! Yesterday, I woke up late and decided to wait for lunch, but I was still craving breakfast foods. As a compromise, I made gluten-free, Veggie Brunch Burritos! Continue reading
