hearts, hearts and more hearts || Journey for JessiI have been both single and in relationships for Valentine’s day, so I speak from experience when I say that Valentine’s Day is a very weird holiday on both parts.  V-day has always just be eh for me.  I don’t hate it, I am not its number one fan.  In my opinion, it is just a holiday in which everyone gets all stressed out and–more often times than not–just straight up sad on the 14th.  Please people.  Calm down.  If you have a significant other, just relax.  Spend the day together.  Do not build these huge expectations of grandeur.  My best Valentine’s day with my boyfriend at the time was a night spend at home making dinner together and watching Scrubs.  If you are single, oh my gosh!  Enjoy it!  Once I embraced being single (and happy) this Valentine’s Day, I am more in favor of this day of love than I used to be.

Growing up, Valentine’s Day was always about family–and I cannot thank my mom enough for instilling this.  That way, it was just another exciting holiday filled with sweet treats and little surprises.  This year, my lovely mother did not disappoint and I received her care package filled with supplies to bake with, a new mug, dark chocolates and a festive sweater to wear on Valentine’s Day.  

hearts, hearts and more hearts || Journey for JessiRewind to Friday, though.  The “on campus” V-day celebration.  I tried to be festive in my red flats and not get annoyed by the childish, overly-stuffed animals that filled girls’ arms (this is college ladies).  Okay.  That is my only bitter comment, I swear.  I did really enjoy the guy walking around on campus with a “kisses for singles” sign passing out Hershey kisses.  He is doing the single life right haha.  

hearts, hearts and more hearts || Journey for JessiNow, on to actual Valentine’s Day.  I woke up early to go for a quick run.  I am glad I woke up early to enjoy the quiet and sunshine before the snow hits the week.  I took it easy since I am still recovering from being sick this week.  I wanted to go another half mile, but I needed a tissue so I could breathe.  To get in the spirit, I added a red bow to my hair–woo!  Holidays always make me happy and I tend to go all out!

Then, I made breakfast!  Banana Egg “Pancakes” with added oats.

♦ 2 egg whites

♦ 1 mashed banana

♦ ¼ cup oats

Just mix together and pour in a skillet.  I poured my batter in a heart cookie cutter!

IMG_8065After doing some “me pampering,” I popped in a classic and snacked on an apple, almonds, and chocolate PB2.

I through in a quick at home WOD in the afternoon!  Push hard on holidays–always.  That way you won’t feel as guilty for indulging.

Later that evening, my roommate invited friends over for dinner and games.  Naturally, I saw this as a great opportunity to bake!
