p.r. for pizza
Call me crazy, but I have never been a huge fan of pizza. In fact, I use to despise it as a kid. I recall going to friends’ birthday parties on several occasions where their parents would kindly order something different for me–the weird kid that hated pizza and loved broccoli. As I grew up, I developed more of a taste for pizza (must be my Italian roots). I have to really be in the mood for it though, and it has to be pretty darn good for me to eat it. This weekend was one of those times. For some reason, I was craving pizza–a very rare occurrence indeed. Instead of running to Beau Jeau’s and ordering their gluten-free, lactose-free pie, I made my own Lactose-Free Whole Wheat Veggie Pizza. Continue reading
cilantro lime rice
Being from Texas, the amount of Mexican food consumed during my lifetime is quite substantial. The only thing that put a halt to all the endless chips and salsa, Freebirds burritos, and sizzling fajitas galore was my decision to attend school in Colorado. The Mexican food is sub-par here and it is one of the things I crave when I go home. I still get my fix from time to time with a Chipotle bowl from time to time, but I like to stay away from the fast food. Up there on my “hard to resist” list? Chipotle’s Cilantro Lime Rice.
skinny lemon cookies
I made these cookies a while back for my momma’s birthday. She loves lemon and prefers a healthier treat if she has the option. Since I love to bake and enjoy the challenge of making healthy goodies, I whipped up these Skinny Lemon Cookies. They were so simple to make, tasty and easy to transport to my momma all the way in Texas. Both my dad and mom raved about them! Nothing makes me happier than a successful recipe!
striving for progress
Many of you who follow me on Instagram, know that I have made some significant progress mentally and physically to my overall health and wellness. Yes I have made progress: I am happier, healthier, fitter and living in the moment more, but I still have room to grow and improve on myself. That is why this is my journey and not my destination.
trader joe’s in foco
It was a pretty exciting day yesterday. I have a thing with grocery stores. I absolutely love them. Grocery shopping is one of my favorite stress relievers. Call me weird–I already know. So this weekend, my town opened up their first Trader Joe’s! It is the equivalent of Disneyland opening to me. Of course, I had to visit opening weekend!
blueberry muffin protein smoothie
This smoothie was spot on! I made it a few weeks ago and have made it a couple times since then. It really does satisfy that fix for a huge, crumbly blueberry muffin bursting with blueberries (and loads of sugar). This smoothie, however, does not have all that processed, added sugar. What it does have, though, is filling protein.
