I know the “pumpkin season” has come to a close (Happy December!), but I could not not share these Pumpkin Protein Donuts. They are healthier than normal donuts, think baked not fried and packed with protein and real pumpkin puree. Yum! So go ahead and indulge in another pumpkin treat before the ‘nog flavors take over (I will take eggnog over pumpkin any day to be honest…but the ‘nog can wait a bit more).
Ingredients
- 1 ¼ c FlapJacked Buttermilk Protein Pancake Mix
- 1 Tbsp pumpkin pie spice
- ¼ tsp baking powder
- 1 Tbsp brown coconut sugar
- 1 c unsweetened almond milk
- ¼ c So Delicious© Pumpkin Coconut Milk
- 1 egg
- ½ c pumpkin puree
Begin by preheating the oven to 350°F. While the oven is heating, combine all dry ingredient together in a medium bowl.
Add in the wet ingredients to the dry and mix together.
Spoon or pipe batter into a donut pan and bake in the oven for 12-14 minutes.
Allow donuts to cool on a rack.
