coconut chia pudding

 coconut chia pudding | Journey for JessiThis has been my midmorning snack for the past few days.  It has helped me  overcome my cravings for more harmful sugars.  Coconut Chia Pudding fits the paleo requirements of being dairy-free, grain-free, and legume-free.  It is so simple to make, versatile, and oh-so-delicious.

Ingredients:

  • 1 Tbs chia seeds
  • ½ c coconut milk (unsweetened)
  1. Mix the chia seeds and coconut milk together.
  2. Place in the refrigerator for at least 2 hours to thicken.
  3. To serve, add in toppings like banana and/or berries (as pictured above).
  4. Enjoy!!!

  2. Place in the refrigerator for at least 2 hours to thicken.
  3. Serve as is or add toppings such as fruit, nuts, or coconut flakes.
  4. Store leftover in refrigerator.
