Oooohhh baby!  Summer is finally here and for once I am NOT taking summer classes!  It has been a long four years of endless schooling, and although I am not graduating for another year-ish (hello two and a half degrees), this summer is just me, myself and I going on adventures and discovering more about myself.  I am beyond psyched.  I am not gonna lie, despite my awesome class schedule this past semester, my world around me seemed to crumble.  Then I realized I was being a tad too dramatic and letting depression creep back to the surface of my being.  Whoa!  Deep for a post entitled Paleo Coconut Brownies I know, my apologies.  So, let me get back to this bomb recipe because it really does deserve a spotlight.  I will do separate posts about my severe semester slump, including the saga of my pretty much weekly trips to doctor’s offices and all the labs I’m having to do. *Spoiler: still no answers to why my body is flipping out.*  To be continued… BUT read on for delish Paleo Coconut Brownies because chocolate fixes everything, right?

At last!  The moment you’ve been waiting for… my Paleo Coconut Brownies!  Yum!  I whipped up these brownies a few weeks ago during finals week.  Shout out to my roomie who woke up one morning craving brownies, made them, then got me on a brownie kick for a few weeks hah!  I probably made brownies 1-2 times a week for a few weeks for every occassion like birthdays, potlucks, library studying, just because… These brownies ranged from full-on Slutty Brownies (cookie + brownie + oreo) to “healthier” brownies.  Thus, my Paleo Coconut Brownies were born!

They were moist, dense, chocolately, and for those claiming to “not like coconut” (HAH!), these don’t taste like coconut, just made with coconut ingredients.

Paleo Coconut Brownies

Ingredients

  • ½ c lite coconut milk
  • ²/3 c coconut sugar
  • ¹/3 c cacao powder
  • 1 egg
  • 1 tsp vanilla
  • ¼ tsp salt
  • ¼ c coconut flour
  • 85% dark chocolate chunks, to taste (I chop up a bar of green&black’s)

Pre-heat oven to 350ºF.  Heat milk in a sauce pan until steaming.  Add in the cacao and sugar to the hot milk and stir together.  While stiring, take the sauce pan off the heat to prevent burning.  Add the salt, egg, and vanilla to the mixture.

Add in the coconut flour and mix very well until the batter is smooth.  Fold in the chocolate chunks.  Pour batter into a foil-lined pan.  For this recipe, I baked the brownies in a round, glass pyrex bowl.  If you want to bake in an 8×8 pan, you will need to double or even triple the recipe, depending on the desired thickness of the brownies.  Bake 40-50 minutes or until a toothpick comes out from the center clean.

  4. Add in the cacao and sugar to the hot milk and stir together.

  5. Add the salt, egg, and vanilla to the mixture.

  6. Add in the coconut flour and mix very well until the batter is smooth.
  7. Fold in the chocolate chunks.
  8. Pour batter into a foil-lined pan.  *baked  in a round, glass pyrex bowl; to bake in an 8×8 pan, double or even triple recipe.
  9. Bake 40-50 minutes or until a toothpick comes out from the center clean.
