My oats are back and I couldn’t be happier!  Exaggeration?  Yeah, right.  Well, first off, I was very indecisive this morning, so I took my dilemma to snapchat {@emvalerioti}, “Oats or Eggs for my b-fast?”  The polls came rolling in and you all said oats!  I probably would have made oats anyway.  Does anyone else do this?  You think you are indecisive on something, then ask around or flip a coin and you are unhappy with the result and go the other direction?  I do this constantly.  Eh, that’s okay because it brings me to a decision doesn’t it?  Anyway… this morning I made an old staple: Apples & Cinnamon Oats.

Apples & Cinnamon Oats

Ingredients

  • 1/3 c rolled GF oats
  • ½ granny smith apple
  • ¼ c unsweetened coconut milk
  • cinnamon, cinnamon, cinnamon

Just combine all ingredients together, and microwave for 1:30 minutes.  Top with even more cinnamon and ENJOY!

Easy, simple, bam. Done right?  That’s what I thought.  This was originally just supposed to be a quickie Insta post {@emvalerioti}, then I was writing the caption and it turned to a paragraph, and NO-ONE really digs the Insta rants… so here is my two ten cents:

I have been doing the whole paleo lifestyle thing for a while now.  Paleo = no dairy, grains or legumes.  It was pretty simple for me actually.  I didn’t have to give up a lot, just made a few adjustments to my lifestyle/diet.  It’s also been no secret recently that I have been feeling low and because of it, I have been super anxious, full speed ahead to try to “fix” myself.  Still no answers, yet, BUT this time.  I’m okay with that {read here}.

I’ve also been more lax on my diet.  Not necessarily being unhealthy.  Quite the opposite.  I’ve actually been more healthy.  It’s a mental game for sure.  I’m not so anal on “oh my gosh, is this paleo or not??” anymore.  I’m focussing on what my body is honestly craving.  I’m not honestly craving brownies, I just think I need to treat myself because I’ve been depriving myself.  That’s no bueno.  So I’ve loosened up.  Chilled out.  I’ve reintroduced gluten-free grains to my life again.  Am I dead?  No.  On the contrary, I am actually feeling better with my morning oats and lunch tacos with corn tortillas.  {Still GF because I have a moderate intolerance to gluten and I’m pretty sure it’s not helping the face situation.}

Ooo yeah!  AND I’ve been have some non-GMO, organic soy beans, miso, and tofu on occasion as well.  Soy doesn’t affect me from what I can tell, so I’ve added it back into the mix.  As long as it is clean as can be.  I splurge on the good soy products because soy is one of the most dirty AF food sources {according to many sources, not trying to be obscure, there are just so many sources to link}.

So there it is.  For me, it’s not the paleo way or the high way.  It’s MY way or the high way.  And that’s how everyone’s diet should be.  No collective right answers.  I personally do better on higher carbs/grains and feel crappier on a higher fat diet {though I LOVE fats…maybe that’s my problem}.  It’s about trial and error.  The learning curve of life.
