chocolate banana chia pudding

Another recipe video say what?? That’s right!  I got down and dirty (in cacao powder) on snapchat the other night to bring you another video recipe!  This one features my favorite dessert/sweet tooth diet saver: Chocolate Banana Chia Pudding.  Some people do not like the texture of chia seeds in the pudding and to that I say BLEND IT!  That’s right!  Just blend/process the pudding to make a smoother, more pudding-like texture.  Personally, I like the gel texture of the chia seeds.  It is part of the reason I love chia puddings, but to each their own.

Chocolate Banana Chia Pudding

  • Servings: 8-10
  • Difficulty: “medium”

Ingredients

  • ¼ c chia seedschocolate banana chia pudding | Journey for Jessi
  • 1 c unsweetened coconut milk
  • 2 very ripe bananas, sliced
  • drizzle of honey, to taste
  • 1 rounded tbsp cacao powder
  1. In a quart-sized glass bowl, add chia seeds.
  2. To the chia seeds, add coconut milk and stir.
  3. *Add cacao powder to the mixture and combine throughly.
  4. Mix together well while slightly mashing the bananas.
  5. Drizzle honey over the mixture.
  6. *Slice two bananas and add to the mixture.
  7. Chill pudding in the refrigerator for 8-12 hours.  Best to chill overnight.
  8. Stir pudding after chilling before serving and enjoy!

*steps different in video, but after experience, found it’s best to add the banana at the end for more thorough mixing of the cacao powder
