Hello beautiful humans!
It’s day 26 on my Whole30–26!
I can’t believe it. If you can’t tell, my spirits are high and my energy is THROUGH THE ROOF! (I challenge you to count the number of exclamation points in this post… *wink*)
Here is a recap of the last few weeks, plus a delicious omelette…
To set the scene, it’s a chilly, windy morning here in Colorado. I’m sipping my coffee with Nutpods and cinnamon through my silicon straw (saving my pearly whites). My Whole30 is near the end, and I have been reflecting on my experience this go around.
I have sooooo much energy. I didn’t notice this right away, but now I just feel great! I don’t need naps anymore when I used to get 7-8 hours of sleep PLUS a nap around 4pm when I got home from classes. Not anymore! Just call me the Emmy-gizer bunny. On second thought, please don’t call me that, but you get the picture.
With all the energy I have, I am getting to gym more, and wanting to go to the gym again. Last semester, I felt so busy and so anxious, that I found myself dreading going to the gym. If you know me, even the slightest, you know this isn’t me AT ALL. I am proud to say that I am hitting the gym (willingly) these days regularly and loving taking care of my body again.
My mood has also turned around. I feel very upbeat and more grounded these days. I feel in control of my actions and my future. Like I actually do have my sh*t together. Because I do.
I am confident in my food choices these days. I am just coasting along the Whole 30 highway and actually enjoying it. I plan on doing the slow roll introduction plan (more in the Whole 30 book and free on their website. Google it.)
The one thing I miss? And will probable introduce on day 31?

I have had two half-eaten bars of chocolate in my pantry this whole time. I can’t believe I haven’t been tempted by them. Out of sight, mostly out of mind? Sure. Go with that.
I just love chocolate. I am curious to see how it affects my sleep.
Lastly, my food took a bit of a boring detour, but I ramped it back up for breakfast one morning with my Tomato Basil Omelette. I’ve made this before and completely forgot how easy and delicious it is. It’s so easy, you have to try it!
Tomato Basil Omelette
Ingredients:
- 2-3 eggs
- 4-8 cherry tomatoes, chopped
- basil, basil, basil, sliced
- balsamic vinegar
Let’s cook:
- Beat eggs in a small bowl.
- Add in basil and tomato, and whisk together.
- Pour in a skillet and cook, fold, flip…
- Plate and top with pepper, salt, and balsamic vinegar.
