It may be Spring, but in Colorado, that still means cold, windy and/or snowy days here and there.  And when that happens, I am in the mood for something to warm me up, so how about some chili?  Thai Turkey Chili to be exact!  It’s so good.  Good things can happen when you have some random ingredients laying around.

This chili is something different.  The Thai flavor in chili form definitely treats your taste buds.  It’s chili and fills you up, but is still lighter than most and healthy!

Thai Turkey Chili

  • pound ground turkey
  • ½ tsp salt
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • smal red pepper
  • red bell pepper
  • small jalapeño pepper
  • lemon zest from one lemon
  • ¼ cup lime juice
  • 2 tsp onion powder
  • 1 tsp ginger
  • 1 tsp red pepper flakes
  • 1 red onion
  • ½ fresh cilantro
  • 1 bag cubed frozen butternut squash
  • 1 cup sliced mushrooms
  • 2 green onions
  • 1 tbsp coconut aminos
  1.  In a large pot, cook turkey with salt, garlic powder, chili, jalapeño, red pepper and lemon zest.
  2. Once cooked, add red bell pepper (chopped), lime juice, onion powder, ginger, flakes, and red onion.
  3. After a few minutes, add mushrooms and butternut squash (thawed) and coconut aminos.
  4. Continue to simmer for 10 minutes.
  5. Serve with cilantro and green onion.
