day sixteen | reignitedHappy Saturday!  It was a great day of training and getting back on track with my meals.  After one hiccup today while training (eat protein before squatting people—not just a green smoothie), I got back to the grind and successfully rounded out my first week on my new program.  Whoop!  Plus, after a some inspiring words from the Whole30‘s Stephanie, I   managed to control my snacking and cravings more today than I have been.   Continue reading

tomato basil omelette

tomato basil omelette || Journey for JessiYes.  Yes, this is another breakfast post.  I make a lot of omelettes, but this is by far one of my best yet– the tomato basil omelette!  Oh yum!  Last week week when my parents came for a visit, we went to a local diner.  The wait was long, but well worth it.  Everything was so fresh and tasty to give that homey feel.  I ordered an egg white omelette there (surprise), but I got the most unique one on their menu; it had spinach, tomatoes, almonds with a drizzle of vinegar.  It was delicious!  That is where I got my inspiration for this morning’s creation. applesauce oats

Here was my breakfast from the other day.  It consisted of 1/3 cup of liquid egg whites, raw almonds and Applesauce Oats.  

Ingredients

♦ 1/3 c oats (can be old-fashioned or quick; I use a combo of both)

♦ 1/3 c unsweetened applesauce

♦ cinnamon to taste 

Just mix all ingredients together and microwave for 1:30-2 minutes.  Top with more cinnamon if desired and enjoy!

spring flings||Journey for JessiAs I have probably mentioned before, Spring is my favorite season.  I love Easter, getting outdoors, the sunshine, the flowers, etc.  This post is just my ode to Spring and what I do to get out and enjoy it.  When I moved to Colorado a few years ago, my outlook on Spring shifted slightly–snow?? Really??  Oh well, even random snow storms can’t dull my Spring spirit.
