I am back in Colorado for the summer and feelin’ the summertime love! Everything is so green and sunny and hot and I am in my element. So far my summer has consisted of training, fresh meals, pool time, good friends, BBQs, 4-square, long bike rides, nights out in the town and even summer school is more enjoyable. It is crazy to think that July will be here next week–my summer bucket list is still so long! I am on a good pace however, and I am enjoying every moment in the mean time. Continue reading

austin adventures
This weekend, my sister and I headed up to Austin to celebrate my future sister-in-law’s bachelorette party and festivities. It was so much fun and we were lucky to have nice weather. If you have not heard, Houston has been flooding pretty badly and pretty much all of Texas has been hit with some serious storms. Pretty much everything we did centered around the outdoors like grilling and playing games on the patio, going to various wineries and BBQ for lunch, to walking around 6th Street bar hopping the night away. snacking on the go
Yesterday was busy, busy for me. I woke up at 5:30am to get to my cycling class at 6:30am (it is 100% worth it to me), and I did not get home until 7:30 PM! Eep! Thankfully, I am such a planner and I knew it was going to be a looong day on campus, so I was able to pack accordingly. When I say “pack,” I, of course, mean food and snacks to keep me going. I usually like to sit down and enjoy my food without distractions, but sometimes, a girl has to multi-task.
stuffy sleepy and sick
I admit it. I was sick last week. Despite ALL of my precautions and sanitary behavior the week before, like my uptake in vitamin C for example. I guess it is difficult to fight a college community teeming with infection. It did not turn out to be the flu, thank goodness, although Wednesday (at my worst) had me worried. I am feeling way better now, though still runny nose, my lethargy and head congestion are fading. So how did I beat this week? Here are my tips to take care of myself while staying on a fitness program.

I LOVE tea. I have it at least 1-2 times a day. There are so many kinds and amazing flavors to try. When I discovered Buddha Teas, my tea-loving heart rejoiced! Because there are so many types and brands of teas available, I like to make my tea time special. Buddha Tea does just that for me!

Fun fact about me? I absolutely love the “nog”. I am all about that creamy, sweet holiday goodness. Just talking about it gives me happy feelings inside. I know what you might be thinking if you know me, “Emily, what about your nonexistent dairy tolerance?” It is true, dairy hates my insides–milk, cream, cheese, and the likes. Who says vegans have nothing delicious to eat? Certainly not me. Not with these Vegan and Gluten-Free Cinnamon Rolls. Today I am going on day five of my Vegan Challenge, and I must say, aside from a few accidental blunders on day two, things are going very well. It is difficult to say the impact it has made on my body yet (it has not even been a week), but I am sure that after I get finished with my hectic week ahead, I can focus on fine-tuning my body and health. I absolutely love summer and everything about it, right down to the +100° and humid Texas weather.
