one of those what I ate in a day posts

What I ate in a day. Are these still a thing? They used to be. Well here it is. What I ate in a day. A good day. A day I was documenting so it did not include 5 ounces of chocolate chips that I sometimes eat in a day, or the gluten-free animal crackers and chocolate bar that I had for dinner one weekend because my chicken was taking to long in the crock-pot. No one ever shows those days.

It’s not this one either.

But. I will be more honest.

This was a planned, nutritious, feeling hydrated kind of day.

breakfast

  • Van’s gluten-free waffle
  • maple syrup
  • smart balance butter
  • banana
  • strawberries
  • Vital Farm’s egg
  • spinach

lunch

  • broccoli slaw salad
  • chopped salad
  • black forrest deli turkey
  • Tessemae’s cilantro lime ranch

dinner

  • shredded chicken with BBQ sauce
  • zucchini
  • summer squash
  • gold potatoes

snacks

  • cherries
  • Clif Builder’s bar
  • No Cow bar
  • Kite Hill yogurt

This was all about 2100 calories and 126 grams of protein. This turned out to be a lower energy consumption day for me.

And guess what?

I was hungry when I woke up.

I am saying all this to help other people realize that 1200 calories is not the way to go. I am not a dietician, nor do I pretend to be, but any good dietician, nutrition coach, trainer (there’s a difference between all of those) will not have you on 1200 calories.

And I got this from a good dietician. Laura Lygos is amazing. She is @thesassydietician and she will be real with you.

I am only speaking from a person who has been there. And has some credentials to her name.

I have done the 1200 calorie thing, the 1500 calorie thing, the not counting calorie thing, the paleo thing, the vegan thing, etc, etc. (I haven’t tried the keto thing because by that trend, I had already learned my lesson.) The lesson that I knew what foods worked for me– a mix of it all!

From every class of eating out there, I have foods that work for me and some that do not. From every category.

So there is what worked for me. On this particular day. I was hungrier the next day. I will probably have chocolate chips another day and when quarantine is over, go get some FISH TACOS!

What do you really eat in a day? Share below. Let’s start being honest.

thai turkey chili

It may be Spring, but in Colorado, that still means cold, windy and/or snowy days here and there.  And when that happens, I am in the mood for something to warm me up, so how about some chili?  Thai Turkey Chili to be exact!  It’s so good.  Good things can happen when you have some random ingredients laying around.

In case you missed it last night on my snapchat (@emvalerioti), I made my first video recipe: Shrimp Tacos for Cinco de Mayo!  It’s definitely janky being my first video, and it was recorded on my snap and not a high end camera… BUT it was über fun to make!  I enjoyed it and I got fabulous feedback from everyone, so thanks y’all!  Here are the snips compiled together with the recipe below!   Continue reading

day twenty-six | foodie flow

day twenty-six | foodie flow | Journey for Jessi

Just four more days!  Four.  That’s it!  I keep saying that this whole Whole30/Paleo thing is just natural to me now.  I guess that’s why it’s more of a lifestyle than a diet.  It just flows well, I have never been hungry, my sleep has improved drastically, my energy levels (did I also mention that this month I cut coffee???)… Continue reading

day twenty-four & -five | food glorious food

IMG_1916

The days are just flying by now.  I honestly cannot keep up!  Yesterday was meal prep day, whoop!  The usual.  I cooked and caught up on household chores, homework, and studying.  Oh—and watched the Broncos lead the way into the Superbowl (while working on mobility, course)!  Pictured above was my Sunday, yumday breakfast which consisted of  Continue reading

day eight | a smoothie & sliders

week two: day eight | Journey for JessiI woke up this morning still starving from empty refrigerator after having spent three weeks at home in Texas.  I pushed through it though as I knew it was just a matter of a few hours before I hit up the grocery store after the gym.    All morning I just planned out my meals for next week and made my grocery list.  I am trying to be better about meal planning and sticking to my lists.  I did make a smoothie this morning to get me through my workout and shopping.

miso soup & sushi

miso soup & sushi || Journey for Jessi

I am super behind on posts, but I plan on catching up this week!  I have been so connected via Instagram and now snapchat, that sometimes I forgo the longer posts.  I received a lot of request for my miso soup recipe that I made this weekend, so I figure I will start with that!  Miso soup is my go-to soup when I need something quick and tasty or when my digestive system is out of whack.

don’t buy your tomato sauce

don't buy your tomato sauce || Journey for JessiDon’t buy your tomato sauce.  Just don’t.  Not convinced?  How about next time you go to the grocery store you check to see the added sugar, salt and preservatives listed on the ingredients list?  If you are shocked by what your eyes read, don’t worry.  It is so simple to make your own tomato sauce.  Just keep on reading!  If you aren’t shocked, nor care, continue on your westernized-grocery store shopping spree and skip this post. summer vibes

summer vibes || Journey for JessiI am back in Colorado for the summer and feelin’ the summertime love!  Everything is so green and sunny and hot and I am in my element.  So far my summer has consisted of training, fresh meals, pool time, good friends, BBQs, 4-square, long bike rides, nights out in the town and even summer school is more enjoyable.  It is crazy to think that July will be here next week–my summer bucket list is still so long!  I am on a good pace however, and I am enjoying every moment in the mean time.
