What I ate in a day. Are these still a thing? They used to be. Well here it is. What I ate in a day. A good day. A day I was documenting so it did not include 5 ounces of chocolate chips that I sometimes eat in a day, or the gluten-free animal crackers and chocolate bar that I had for dinner one weekend because my chicken was taking to long in the crock-pot. No one ever shows those days.

It’s not this one either.

But. I will be more honest.

This was a planned, nutritious, feeling hydrated kind of day.

breakfast

  • Van’s gluten-free waffle
  • maple syrup
  • smart balance butter
  • banana
  • strawberries
  • Vital Farm’s egg
  • spinach

lunch

  • broccoli slaw salad
  • chopped salad
  • black forrest deli turkey
  • Tessemae’s cilantro lime ranch

dinner

  • shredded chicken with BBQ sauce
  • zucchini
  • summer squash
  • gold potatoes

snacks

  • cherries
  • Clif Builder’s bar
  • No Cow bar
  • Kite Hill yogurt

This was all about 2100 calories and 126 grams of protein. This turned out to be a lower energy consumption day for me.

And guess what?

I was hungry when I woke up.

I am saying all this to help other people realize that 1200 calories is not the way to go. I am not a dietician, nor do I pretend to be, but any good dietician, nutrition coach, trainer (there’s a difference between all of those) will not have you on 1200 calories.

And I got this from a good dietician. Laura Lygos is amazing. She is @thesassydietician and she will be real with you.

I am only speaking from a person who has been there. And has some credentials to her name.

I have done the 1200 calorie thing, the 1500 calorie thing, the not counting calorie thing, the paleo thing, the vegan thing, etc, etc. (I haven’t tried the keto thing because by that trend, I had already learned my lesson.) The lesson that I knew what foods worked for me– a mix of it all!

From every class of eating out there, I have foods that work for me and some that do not. From every category.

So there is what worked for me. On this particular day. I was hungrier the next day. I will probably have chocolate chips another day and when quarantine is over, go get some FISH TACOS!

summer vibes

summer vibes || Journey for JessiI am back in Colorado for the summer and feelin’ the summertime love!  Everything is so green and sunny and hot and I am in my element.  So far my summer has consisted of training, fresh meals, pool time, good friends, BBQs, 4-square, long bike rides, nights out in the town and even summer school is more enjoyable.  It is crazy to think that July will be here next week–my summer bucket list is still so long!  I am on a good pace however, and I am enjoying every moment in the mean time. snacking on the go || Journey for JessiYesterday was busy, busy for me.  I woke up at 5:30am to get to my cycling class at 6:30am (it is 100% worth it to me), and I did not get home until 7:30 PM!  Eep!  Thankfully, I am such a planner and I knew it was going to be a looong day on campus, so I was able to pack accordingly.  When I say “pack,”  I, of course, mean food and snacks to keep me going.  I usually like to sit down and enjoy my food without distractions, but sometimes, a girl has to multi-task.

hearts, hearts and more hearts || Journey for JessiI have been both single and in relationships for Valentine’s day, so I speak from experience when I say that Valentine’s Day is a very weird holiday on both parts.  V-day has always just be eh for me.  I don’t hate it, I am not its number one fan.  In my opinion, it is just a holiday in which everyone gets all stressed out and–more often times than not–just straight up sad on the 14th.  Please people.  Calm down.  If you have a significant other, just relax.  Spend the day together.  Do not build these huge expectations of grandeur.  My best Valentine’s day with my boyfriend at the time was a night spend at home making dinner together and watching Scrubs.  If you are single, oh my gosh!  Enjoy it!  Once I embraced being single (and happy) this Valentine’s Day, I am more in favor of this day of love than I used to be.

cheat days don't make you fat || Journey for JessiYes.  I see you glorious plate of homemade Mary’s Mountain Cookies… Yes.  You did overcome my will power tonight.  Yes.  I am talking to cookies.  So I had an off day today–a “cheat day” if you please.  I am human after all.  A human living in a society filled with yummy goodies and sweets that seem to be at the center of every social event.  Even if that event is a Saturday night at home with the roommates and a friend brings over famously good treats.  This cheat day of mine involved a bite of each type of treat (plus a brownie and cookie quarter), 2 processed protein bars, and milk chocolate (with almonds if that makes it better?)  My cheat day won’t make me “fat,” however unhealthy these items are.  I won’t wake up tomorrow with my 7 pounds of fat back on my body.  It will make me stronger, though.

ski break

ski break || Journey for JessiLast weekend was a blast!  I went down to Winter Park for the weekend to go skiing–a typical pass time for the Colorado student I have discovered.  It was a nice break to exert some energy on the snowy mountains and be at one with nature and away from the crowded gym and college campus.  I love any type of vacation that involves a physical activity paired with it like skiing, surfing, hiking, biking, etc.  Although I did have a “cheat” weekend, I always made sure to keep everything in balance too.
