one of those what I ate in a day posts

What I ate in a day. Are these still a thing? They used to be. Well here it is. What I ate in a day. A good day. A day I was documenting so it did not include 5 ounces of chocolate chips that I sometimes eat in a day, or the gluten-free animal crackers and chocolate bar that I had for dinner one weekend because my chicken was taking to long in the crock-pot. No one ever shows those days.

It’s not this one either.

But. I will be more honest.

This was a planned, nutritious, feeling hydrated kind of day.

breakfast

  • Van’s gluten-free waffle
  • maple syrup
  • smart balance butter
  • banana
  • strawberries
  • Vital Farm’s egg
  • spinach

lunch

  • broccoli slaw salad
  • chopped salad
  • black forrest deli turkey
  • Tessemae’s cilantro lime ranch

dinner

  • shredded chicken with BBQ sauce
  • zucchini
  • summer squash
  • gold potatoes

snacks

  • cherries
  • Clif Builder’s bar
  • No Cow bar
  • Kite Hill yogurt

This was all about 2100 calories and 126 grams of protein. This turned out to be a lower energy consumption day for me.

And guess what?

I was hungry when I woke up.

I am saying all this to help other people realize that 1200 calories is not the way to go. I am not a dietician, nor do I pretend to be, but any good dietician, nutrition coach, trainer (there’s a difference between all of those) will not have you on 1200 calories.

And I got this from a good dietician. Laura Lygos is amazing. She is @thesassydietician and she will be real with you.

I am only speaking from a person who has been there. And has some credentials to her name.

I have done the 1200 calorie thing, the 1500 calorie thing, the not counting calorie thing, the paleo thing, the vegan thing, etc, etc. (I haven’t tried the keto thing because by that trend, I had already learned my lesson.) The lesson that I knew what foods worked for me– a mix of it all!

From every class of eating out there, I have foods that work for me and some that do not. From every category.

So there is what worked for me. On this particular day. I was hungrier the next day. I will probably have chocolate chips another day and when quarantine is over, go get some FISH TACOS!

What do you really eat in a day? Share below. Let’s start being honest.

meal preppin’ once again

paleomg breakfast tacos | meal prep | food prep | paleo | eggs | sweet potatoes | Moving Mountains Wellness

After much back and forth {and to be honest laziness}, I decided it was time to meal prep for the week once again.  This has been a back and forth relationship indeed.  I used to go over the top with the prep and it ended up stressing me out–not the end goal.  After trial and error, I’ve found the best way for me, and here is how it goes… Continue reading

breaking news: my oats are back

breaking news: my oats are back | Journey for Jessi

My oats are back and I couldn’t be happier!  Exaggeration?  Yeah, right.  Well, first off, I was very indecisive this morning, so I took my dilemma to snapchat {@emvalerioti}, “Oats or Eggs for my b-fast?”  The polls came rolling in and you all said oats!  I probably would have made oats anyway.  Does anyone else do this?  You think you are indecisive on something, then ask around or flip a coin and you are unhappy with the result and go the other direction?  I do this constantly.  Eh, that’s okay because it brings me to a decision doesn’t it?  Anyway… this morning I made an old staple: Apples & Cinnamon Oats. day twenty-four & -five | food glorious food

IMG_1916

The days are just flying by now.  I honestly cannot keep up!  Yesterday was meal prep day, whoop!  The usual.  I cooked and caught up on household chores, homework, and studying.  Oh—and watched the Broncos lead the way into the Superbowl (while working on mobility, course)!  Pictured above was my Sunday, yumday breakfast which consisted of  Continue reading

day nineteen | bacon egg breakfast cups

day nineteen | bacon egg breakfast cupsRemember me raving about meal prep day yesterday?  Well here is one of those recipes that is totally saving me this week, Bacon Egg Breakfast Cups.  It was my first day back to classes after winter break and my schedule was hectic all day.  The only solace I had was knowing that on my hour meal breaks that I already had some delicious food waiting for me at home.   Continue reading

day sixteen | reignited

day sixteen | reignitedHappy Saturday!  It was a great day of training and getting back on track with my meals.  After one hiccup today while training (eat protein before squatting people—not just a green smoothie), I got back to the grind and successfully rounded out my first week on my new program.  Whoop!  Plus, after a some inspiring words from the Whole30‘s Stephanie, I   managed to control my snacking and cravings more today than I have been.   Continue reading

day thirteen | health binge

day fourteen | health binge | Journey for Jessi

Uh-oh.  I have a confession.  I have been “healthy” binging.  I am not saying that binging is healthy by any means.  What I am saying is that I have been consuming a lot of healthy foods (mostly healthy fats) to an excess.  Yeah, it’s time to stop that.  Continue reading

pumpkin protein donuts

pumpkin protein donuts || Journey for JessiI know the “pumpkin season” has come to a close (Happy December!), but I could not not share these Pumpkin Protein Donuts.  They are healthier than normal donuts, think baked not fried and packed with protein and real pumpkin puree.  Yum!  So go ahead and indulge in another pumpkin treat before the ‘nog flavors take over (I will take eggnog over pumpkin any day to be honest…but the ‘nog can wait a bit more).   Continue reading

baked egg in avo

baked egg in avo || Journey for Jessi

You have all seen it.  You have all drooled over it.  Well, today is the day you should actually make it.  What am I talking about?  It is none other than the famous baked egg in the avocado found all over Pinterest, of course.  Do not be intimidated!  I have had my fair share of Pinterest fails to be sure, but not this time!  This breakfast looks gourmet, yet it is so easy to make–and yummy! my personal sauna

my personal sauna || Journey for JessiThe flooding is gone and the mosquitos, humidity and heat are here!  Confession: I love the heat and the humidity.  Call me crazy, but I am in my element.  I have been taking advantage of the weather for my workouts for sure.  Even if it is high noon or 3pm, I will get my booty outside.  The sun, heat and humidity doesn’t bother me, I just make sure I am hydrated.  The mosquitos on the other hand…those things can just evaporate.  Anyway…be sure to hydrate and eat a good breakfast like… Continue reading
