My oats are back and I couldn’t be happier! Exaggeration? Yeah, right. Well, first off, I was very indecisive this morning, so I took my dilemma to snapchat {@emvalerioti}, “Oats or Eggs for my b-fast?” The polls came rolling in and you all said oats! I probably would have made oats anyway. Does anyone else do this? You think you are indecisive on something, then ask around or flip a coin and you are unhappy with the result and go the other direction? I do this constantly. paleo snickerdoodles
So, I have been on a “cookie craze” recently. For some reason, I have been craving cookies, and I am the type of person that believes in satisfying your cravings—in moderation of course. I find that if I do not allow myself what I really crave, like cookies or a cupcake every now and then, then I will eat a whole bunch more trying to fulfill my craving, only to give in to it later after all of the other food I stuffed into my mouth. The gluten-free dark chocolate chip cookies shown above are the result of my friday night cookie craving. Once I have perfected the recipe, I will definitely post it! The cooking craze did not stop there though. Over the weekend, I made Paleo Snickerdoodles for my gluten-free-eating dad when he came home from his work trip. Continue reading

This one goes out to all the dads out there! What would we do without them? I know I would be lost without my dad. He is my rock and my hero. Some say we have identical personalities: short Italian temper, quirky humor, engineers… the list goes on. I am me because of my dad. He always stressed the importance of school and learning, thus allowing me to pursue my college education. He was the one that initially encouraged my fit and healthy lifestyle.
