Sometimes I just have to get outside and move. I have been feeling unmotivated and uninspired in the gym setting. This past Saturday, however, was the first warm, beautifully sunny Saturday I’ve had in a while. I had no agenda. No work. No exams. Just nothing. That is truly beautiful to me.

spring flings
As I have probably mentioned before, Spring is my favorite season. I love Easter, getting outdoors, the sunshine, the flowers, etc. This post is just my ode to Spring and what I do to get out and enjoy it. When I moved to Colorado a few years ago, my outlook on Spring shifted slightly–snow?? Really?? Oh well, even random snow storms can’t dull my Spring spirit.

ski break
Last weekend was a blast! I went down to Winter Park for the weekend to go skiing–a typical pass time for the Colorado student I have discovered. It was a nice break to exert some energy on the snowy mountains and be at one with nature and away from the crowded gym and college campus. I love any type of vacation that involves a physical activity paired with it like skiing, surfing, hiking, biking, etc. Although I did have a “cheat” weekend, I always made sure to keep everything in balance too.

What have I been up to? Well, other than the new fresh-faced blog appearance (let me know what you think in the comments), I have been bounding all over the place in my studies, life, and even changes in my environment. I feel like I am already trying to get a fresh start on the New Year fast approaching. For now, I will focus more on getting things caught up before I reveal my New Year’s resolutions in the making, which, should be revealed not a day sooner than New Year’s Day. Instead, here is a refresher of the new things occurring in my life.

behind
Let me just apologize for being a bad blogger lately. My October has been filled with all sorts of (vegan) food, festivities, fall, and lots of studying. I know it is no excuse because blogging does not take that long, especially if I just pop a few recipes online (I have so many to post from Vegan Month). For now, I will do a recap/summary of my October, then I will begin posting recipes again. I wish I had more workouts to post lately, but unfortunately, I have to admit I have fallen behind on my health and fitness since the summer. As a busy engineering student, most times I find it difficult to get out for some “me” time. I am really trying hard this school year at making my health, both physical and mental health, a top priority. Why? Because being healthy makes me happy and when I feel happy, I feel like my life is more put together, and when I feel like my life is put together, I find that I am more inclined to study more effectively. hiking the summer away
On to the finale of my summer “vacation.” I say “vacation” because I was vacationing in the colorful state in which I attend school, Colorado. I am so blessed to call this amazing place my home away from home. The beauty and wonder never ceases to captivate me. On the final day in Glenwood Springs, my family and I went off the beaten path to a more than less popular hiking trail, but it did not disappoint by any means! It was full of gorgeous views of the river and falls and if it were not for the Grizzly Bear encounter (yes, GRIZZLY BEAR!!!), then we would have kept hiking the afternoon. Continue reading
when in colorado
When in Colorado, you have to spend as much time as possible outside. There is really no other way. After moving back up via a two day road trip, I was itching to be back in the sun and back in nature. The day after I got back (when I was still residing in a hotel), I made it out to Horsetooth Resevoir with my boyfriend to go kayaking. It was so much fun! A nice way to work those arms and shoulders without even realizing. Continue reading

Just one week ago, I was waking up in Colorado heading back from a wonderful weekend camping trip. It was a great trip filled with good food, a couple of great friends, slack-lining, sling-shooting, and sleeping under the stars. This trip went so smoothly (aside from the ominous thunder that thankfully rolled away), and I credit planning ahead and preparation for that.

college town vacation
Last week, I packed up my bags and headed back to Fort Collins, the college town home to Colorado State University. I know it may seem strange that on my summer vacation, I took a vacation back to school… but most of my friends reside in Colorado now and I was missing them dearly. The first step was deciding what bags to pack for my week long trip. Do not worry! Despite the picture, I am a light packer. I only bring two bags on trips–even when I go overseas! My go-to-rule is if I cannot carry it myself, then I have overpacked. Continue reading
