After much back and forth {and to be honest laziness}, I decided it was time to meal prep for the week once again. This has been a back and forth relationship indeed. I used to go over the top with the prep and it ended up stressing me out–not the end goal. After trial and error, I’ve found the best way for me, and here is how it goes… Continue reading

thai turkey chili
It may be Spring, but in Colorado, that still means cold, windy and/or snowy days here and there. And when that happens, I am in the mood for something to warm me up, so how about some chili? Thai Turkey Chili to be exact! It’s so good. Good things can happen when you have some random ingredients laying around.
new year the whole30 way | day one
I am doing the January Whole30 reset. Two years ago, I did a Paleo Challenge that sort of morphed into a Whole30. I didn’t do my research. I was new to it all. I begun with paleo and as I did more research, I stumbled upon the Whole30 and began following the program then. I slipped a few times, I cut it a day short, I didn’t scrutinize labels… It wasn’t really a Whole30 at all, which brings me to now. Continue reading
paleo coconut brownies
Oooohhh baby! Summer is finally here and for once I am NOT taking summer classes! It has been a long four years of endless schooling, and although I am not graduating for another year-ish (hello two and a half degrees), this summer is just me, myself and I going on adventures and discovering more about myself. I am beyond psyched. I am not gonna lie, despite my awesome class schedule this past semester, my world around me seemed to crumble. Then I realized I was being a tad too dramatic and letting depression creep back to the surface of my being. Whoa! Deep for a post entitled Paleo Coconut Brownies I know, my apologies. So, let me get back to this bomb recipe because it really does deserve a spotlight. I will do separate posts about my severe semester slump, including the saga of my pretty much weekly trips to doctor’s offices and all the labs I’m having to do. *Spoiler: still no answers to why my body is flipping out.* To be continued… BUT read on for delish Paleo Coconut Brownies because chocolate fixes everything, right? Continue reading
paleo carrot cake
Hey there! Like carrot cake? I hope that’s why you’re here, because I love carrot cake! Want to know my new carrot cake secret?? Whelp, you better keep reading then. I have to say, I am craving these now, but then again, I am craving everything and anything sweet… someone say sugar? I just completed day four of a sugar detox. It was much needed. Trust me. I may eat healthier than some people, but when it comes to dessert, seriously look out. Continue reading
paleo coconut cacao mug cake
Hi. Hello. Howdy. It’s me, Emily. Emily the author, the blogger on here. The inconsistent blogger of Journey for Jessi. I was doing so well guys, with the whole blogging on the regular thing. Life happens though, the wheels fall off. I was taking a vacation (I wish a real one with palm trees and sandy beaches and all…) I am not going to lie and say things have been “super duper,” (see last post about honesty), but things have been getting better. Okay, enough on that topic. This post is meant to be a quickie recipe to get me back into the groove–I give you the paleo coconut cacao mug cake! Continue reading
day twenty-seven, -eight & -nine | fueled up
Happy Friday everyone! Boy, was it a
good great week! The final week of my Whole30 and I honestly feel on top of the world. My food has been in control. I have learned what works for me. I have my “sugar dragon” under control. It is pretty amazing, but I will go into further detail in my final Whole30 summary post this weekend—so stay tuned. As for this week, I’m focusing on my meals, workouts, and recovery sessions. Continue reading
day twenty-six | foodie flow
Just four more days! Four. That’s it! I keep saying that this whole Whole30/Paleo thing is just natural to me now. I guess that’s why it’s more of a lifestyle than a diet. It just flows well, I have never been hungry, my sleep has improved drastically, my energy levels (did I also mention that this month I cut coffee???)… Continue reading
day twenty-four & -five | food glorious food
The days are just flying by now. I honestly cannot keep up! Yesterday was meal prep day, whoop! The usual. I cooked and caught up on household chores, homework, and studying. Oh—and watched the Broncos lead the way into the Superbowl (while working on mobility, course)! Pictured above was my Sunday, yumday breakfast which consisted of Continue reading
day twenty, -one, -two & -three | all float on
Can you tell it was the first week back to class? Was it my lack of posting that gave it away? Sorry about that. It was a busy, but awesome, week. My classes are fantastic, I have more time to focus on myself as well this semester too. I know that this semester is my prime time to get my nutrition and training where I have been wanting it to be. I just have to want the struggle bad enough. Continue reading
