My oats are back and I couldn’t be happier!  Exaggeration?  Yeah, right.  Well, first off, I was very indecisive this morning, so I took my dilemma to snapchat {@emvalerioti}, “Oats or Eggs for my b-fast?”  The polls came rolling in and you all said oats!  I probably would have made oats anyway.  Does anyone else do this?  You think you are indecisive on something, then ask around or flip a coin and you are unhappy with the result and go the other direction?  I do this constantly.  Eh, that’s okay because it brings me to a decision doesn’t it?  Anyway… this morning I made an old staple: Apples & Cinnamon Oats.  week two: day eight | Journey for JessiI woke up this morning still starving from empty refrigerator after having spent three weeks at home in Texas.  I pushed through it though as I knew it was just a matter of a few hours before I hit up the grocery store after the gym.    All morning I just planned out my meals for next week and made my grocery list.  I am trying to be better about meal planning and sticking to my lists.  I did make a smoothie this morning to get me through my workout and shopping.

the jam plan--Journey for JessiThis has been me.  Not kidding.  Just ask my roommates.  When I get stressed or sad or depressed, I bake–I bake a lot.  But with all of that baking comes recipes, and a lot of them.  So this is beneficial for both you and I.  The recipe I am posting here is for Orange Blueberry Oat Muffins–yum right?  You can also substitute cranberries for the blueberries for more of a winter take on this recipe.  That is what I did for my secret santa in Nutrition Club.  I subbed cranberries for blueberries and made the muffins into a loaf. orange miso thai--Journey for JessiWhat is more satisfying than a colorful, flavorful, vegan Thai dish?  Not much… well desserts, but that is a given.  I made this dish several times during my vegan challenge month.  I had it for dinner, then stored the left-overs in the fridge to pack for lunches and have for dinner again later on during the week.  It is a great dish for meal preparation.  (The dish was inspired by Angela Liddon.) gluten-free vegan cinnamon rolls--Journey for JessiWho says vegans have nothing delicious to eat?  Certainly not me.  Not with these Vegan and Gluten-Free Cinnamon Rolls.  Today I am going on day five of my Vegan Challenge, and I must say, aside from a few accidental blunders on day two, things are going very well.  It is difficult to say the impact it has made on my body yet (it has not even been a week), but I am sure that after I get finished with my hectic week ahead, I can focus on fine-tuning my body and health.  Last week was a bit stressful on me, so that is why I decided to treat myself to a yummy Sunday breakfast. pizza pizazz--Journey for JessiWho needs delivery?  Not me, I have a kitchen.  I am always trying to find ways to turn delicious foods that are not usually labeled as”healthy” into a more guilt-free cuisine.  This attempt was for pizza, and it was highly successful.  The Whole Wheat Pizza Crust was spot on topped with Fresh Basil Pesto and the toppings fit both my needs and my boyfriend’s (we went half and half).
