It’s the Sunday before finals for me, and I am doing everything in my power to chill out.  That’s right, actually chill and relax.

Finals are usually the time that student flip out.  That used to be me, and well, deep down there is still a part of me that freaks out a tad… BUT I can control my stress levels.

day eight | a smoothie & sliders

 week two: day eight | Journey for JessiI woke up this morning still starving from empty refrigerator after having spent three weeks at home in Texas.  I pushed through it though as I knew it was just a matter of a few hours before I hit up the grocery store after the gym.    All morning I just planned out my meals for next week and made my grocery list.  I am trying to be better about meal planning and sticking to my lists.  I did make a smoothie this morning to get me through my workout and shopping.

summer vibes

summer vibes || Journey for JessiI am back in Colorado for the summer and feelin’ the summertime love!  Everything is so green and sunny and hot and I am in my element.  So far my summer has consisted of training, fresh meals, pool time, good friends, BBQs, 4-square, long bike rides, nights out in the town and even summer school is more enjoyable.  It is crazy to think that July will be here next week–my summer bucket list is still so long!  I am on a good pace however, and I am enjoying every moment in the mean time. blueberry muffin protein smoothie

blueberry muffin protein smoothie || Journey for JessiThis smoothie was spot on!  I made it a few weeks ago and have made it a couple times since then.  It really does satisfy that fix for a huge, crumbly blueberry muffin bursting with blueberries (and loads of sugar).  This smoothie, however, does not have all that processed, added sugar.  What it does have, though, is filling protein.

sweat and sweet | Journey for JessiYesterday was just one of the many weekend days I spend just hanging out and doing whatever comes to mind.  No schedule, no limiting obligations, no commitments… it is so nice to have days and weekends like that.  This is my last weekend to have such an agenda–rather lack of agenda since classes resume on Tuesday to kick off the spring semester.  As my last free weekend, I decided to do a home workout and make sweet potato chips to enjoy.

cycling and protein | Journey for JessiI am back in Colorado and back at the Rec!  It takes some getting used to after being at my smaller gym in my hometown.  To me, it is more intimidating with all of the students that pretty much live at the gym.  I know it is silly, but some of those big guys look like they could crush (and I am probably right…)  One of my resolutions though, is to stop being afraid of failure.  I often do not try new things for fear of being made fun of and failing, then being made fun of some more.  But, I know I have already grown a lot this year and I feel more confident–so who really cares anyway if I look like a fool?  It’s my first time and I failure is part of the process of success!   Continue reading

get out of your workout rut--Journey for JessiIt is so beyond important to mix up your workout.  I am guilty as charged for just going to the gym, doing the elliptical for an hour, then a few assisted weight machines.  Snore!  My body is bored!  I am so grateful that I got P90X3 for Christmas!  I have completed 6 days of the workouts and am already loving it!  I love the challenge and my body is thankful for something new.   Continue reading

behind--journeyforjessiLet me just apologize for being a bad blogger lately.  My October has been filled with all sorts of (vegan) food, festivities, fall, and lots of studying.  I know it is no excuse because blogging does not take that long, especially if I just pop a few recipes online (I have so many to post from Vegan Month). For now, I will do a recap/summary of my October, then I will begin posting recipes again.  I wish I had more workouts to post lately, but unfortunately, I have to admit I have fallen behind on my health and fitness since the summer.  I do not see this as a failure, though, just another opportunity to overcome a challenge. the BIG salad--Journey for JessiHappy Monday y’all!  What a great Fourth of July weekend!  If you are like me though, you may be feeling a bit sluggish as your “cheat meal” at your 4th BBQ rapidly escalated into a weekend free-for-all… but never fear!  I have several tips to kick it back into bikini bod mode, starting with last night’s dinner– “the BIG salad.”  “Big salads” are a staple in my family’s diet.  We love them because you can make them however you want!
