peanut butter smash cookies | Journey for JessiThese cookie are so so so so so simple!  Pretty amazing.  Just three ingredient, yes, three!  And they take just 10-12 minutes to bake.  Yesterday, I made these for a friend.  I chose them because 1.) they are simple and quick and 2.) since I’m transitioning to paleo, I am attempting to get rid of my huge jar of peanut butter.

Peanut Butter Smash Cookies

Ingredients:

  • 1 cup of peanut butter (smooth)
  • 1 cup of sugar
  • 1 egg

Just beat all three ingredients together while the oven pre-heats of 350ºF.

peanut butter smash cookies | Journey for JessiThe batter should look crumbly.  Just be sure to pack it together.  This is best done with your own two, clean hands.

On a cookie sheet, dish cookie dough out evenly.  Don’t worry about them being too close together.  They don’t spread out much.  In fact, have you ever wondered why most PB cookies have those “grid” marks on top of them?  Well, that’s because since they don’t spread out, you have to smash them down with a fork!

So go ahead! Smash those babies down!  Then, pop in the oven and bake for 10-12 minutes.  Let them cool on the cookie sheet before you ENJOY!

Peanut Butter Smash Cookies

  • Servings: 12
  • Difficulty: easy

  • 1 cup of peanut butter (smooth)
  • 1 cup of sugar
  • 1 egg
  1. Pre-heat oven to 350ºF.
  2. Beat ingredients together.
  3. Compress dough together to form a compact shape.
  4. Dish Tbs portion cookie dough balls onto a cookie sheet.
  5. Press the dough down with a fork.
  6. Bake for 10-12 minutes.
  7. Cool on cookie sheet for 5-10 minutes.
