skinny lemon cookies

skinny lemon cookies || Journey for JessiI made these cookies a while back for my momma’s birthday.  She loves lemon and prefers a healthier treat if she has the option.  Since I love to bake and enjoy the challenge of making healthy goodies, I whipped up these Skinny Lemon Cookies.  They were so simple to make, tasty and easy to transport to my momma all the way in Texas.  Both my dad and mom raved about them!  Nothing makes me happier than a successful recipe!

skinny lemon cookies || Journey for Jessi

Ingredients:

♦ 1 ¼ c whole wheat pastry flour

♦ 1/3 c cornstarch

♦ 1 ½ tsp baking powder

♦ ½ c sugar (or stevia)

♦ ¼ tsp salt

♦ 2 Tbsp softened butter

♦ 2 Tbsp unsweetened applesauce

♦ 1 large egg white

♦ 1 ½ tsp grated lemon zest

♦ 1 tsp vanilla extract

♦ 3 Tbsp lemon juice

skinny lemon cookies || Journey for JessiBegin by preheating the oven to 350°F and preparing 2 baking sheets.

skinny lemon cookies || Journey for JessiWhisk together flour, baking powder, cornstarch and salt together.

skinny lemon cookies || Journey for JessiIn another bowl, beat sugar, butter and applesauce together until creamed.

skinny lemon cookies || Journey for JessiAdd in the egg white, lemon zest and vanilla.  Mix until a smooth consistency is achieved.  Then, beat in the lemon juice.

skinny lemon cookies || Journey for JessiAdd the dry ingredients to the wet and fold together until a dough forms.

skinny lemon cookies || Journey for JessiForm dough into 1 tsp balls and space apart on baking sheets.

skinny lemon cookies || Journey for JessiFlatten out the dough and top with sprinkles or sugar, if desired.  Then bake for 8-10 minutes or until the edges begin to brown up.  Out of the oven, cool the cookies on a flat surface.  *Not a wire rack*
