I made these cookies a while back for my momma’s birthday. She loves lemon and prefers a healthier treat if she has the option. Since I love to bake and enjoy the challenge of making healthy goodies, I whipped up these Skinny Lemon Cookies. They were so simple to make, tasty and easy to transport to my momma all the way in Texas. Both my dad and mom raved about them! Nothing makes me happier than a successful recipe!
Ingredients:
♦ 1 ¼ c whole wheat pastry flour
♦ 1/3 c cornstarch
♦ 1 ½ tsp baking powder
♦ ½ c sugar (or stevia)
♦ ¼ tsp salt
♦ 2 Tbsp softened butter
♦ 2 Tbsp unsweetened applesauce
♦ 1 large egg white
♦ 1 ½ tsp grated lemon zest
♦ 1 tsp vanilla extract
♦ 3 Tbsp lemon juice
Begin by preheating the oven to 350°F and preparing 2 baking sheets.
Whisk together flour, baking powder, cornstarch and salt together.
In another bowl, beat sugar, butter and applesauce together until creamed.
Add in the egg white, lemon zest and vanilla. Mix until a smooth consistency is achieved. Then, beat in the lemon juice.
Add the dry ingredients to the wet and fold together until a dough forms.
Form dough into 1 tsp balls and space apart on baking sheets.
Flatten out the dough and top with sprinkles or sugar, if desired. Then bake for 8-10 minutes or until the edges begin to brown up. Out of the oven, cool the cookies on a flat surface. *Not a wire rack*
